UN-FRIED BAKED YAMS
3- large yams or sweet potatoes or potatoes
1/8- cup olive oil
1- tsp. sea salt
¼- tsp. pepper
Parmesan cheese or vegan parmesan shake, to sprinkle on top
Scrub the yams, sweet potatoes or potatoes.
Cut into sticks, ¼ to ½- inch thick, lengthwise.
Place in a bowl and drizzle with the olive oil, sprinkle with salt and pepper.
Toss until well coated.
Spread them out on a cookie sheet.
Bake at 350° for 30 to 45- minutes, or until soft and browned.
Line a bowl with paper towels.
Scoop fries into the bowl and onto the towels to drain.
Before serving, remove the paper towels and sprinkle with Parmesan cheese.
Dip in Creamy Savory Sauce, ketchup, (homemade) or enjoy them plain.
